In France, Switzerland and Italy, the mountain pastures are revered for the quality of their pasture and consequently the flavours this brings out in the milk and cheese. The cheeses that come from these mountain regions Beaufort, Gruyere, Comte, Fontina and even Parmigiano Reggiano from the Parma Appenine mountains, are justly highly regarded.
We will be tasting some of these, paired with complimentary wines and asking the question, how much influence does the mountain pasture have? To help us discuss this we will compare them against cheeses made in the lower altitudes of England and Ireland.
