MONTGOMERY'S CHEDDAR
For this selection, we’ve picked out a particularly good batch of Montgomery’s Cheddar. It’s normal practice with Cheddar makers to use a different starter culture each day they make cheese. In the mature cheese this means each day’s make is quite different to the next.
These cheeses were made using one of our favourite starters, which gives rich, beefy, meaty, complex, caramelised flavours.
STICHELTON
After a period of soft but very blue cheese just after Christmas followed by some quite firm chalky cheeses, Stichelton is getting back into its stride.
The cheese has the creamy, buttery body that we like in the softer cheeses, but also the malty caramel notes we love in the firmer cheeses.
GORWYDD CAERPHILLY
Gorwydd marries a crumbly, lactic centre with earthy, mushroomy breakdown and an almost leathery flavour on the rind itself. Complex, succulent and satisfying.
ARDRAHAN
The stinky one of the selection, Ardrahan has a pungent-smelling, sticky orange rind, which imparts that savoury, umami, washed rind flavour to the cheese. Since Christmas Ardrahan has been wiping the floor with our other washed rinds. It’s been rich, meaty and rounded. The centre has been fresher, more curd-like and lactic but with a mouthwatering succulence to it. All in all, just delicious.
