A rich, fudge-like sheeps blue; complex and rounded cheddar and earthy, creamy Somerset Caerphilly. Between April and October we will include Tymsboro, a goats milk pyramid. Between November and March, we will include Woolsery, a moist, smooth textured hard goats cheese.
