................... We choose each selection only a fortnight before we send them which means we can send not only our old favourites but some of our newer and more experimental cheeses too. The only criteria is that they taste fantastic. We try to make up a balanced selection and aim to be as seasonal as possible. Each selection contains 4 pieces of cheese and we include a 2 page pamphlet with tasting notes and some information about the cheeses and cheesemakers. ....................
