Our 3 Vinegars, Agrodolce Bianco from the Sante Bertoni, Sanchez Romate Pedro Ximenez Sherry Vinegar and La Vecchia Dispensa's Ricco Balsamic. Agrodolce Bianco is an elegant sweet-sour blend of white wine vinegar (Sauvignon Blanc) and cooked grape must blended and matured in oak barriques then oak or chestnut barrels. Sanchez Romate Sherry Vinegar contains a Palomino grape sherry wine naturally acidified using a solera system which was started 80 years ago, blended with 15% Pedro Ximenez sherry itself a product of a solera, this time over 100 years old. The blend of vinegar and sherry softens the acidity of the vinegar and enhances greater raisiny complexity of flavour. La Vecchia Dispensas Ricco Balsamic is made using Trebbiano grape must which is reduced over 36 hours then moved through barrels of decreasing size in oak, cherry, chestnut, juniper, mulberry and acacia. Although this is an 8 year old vinegar, it is thickened in its final barrelling (new Slovenian oak) in the hot summer months where it evaporates and concentrates. Rich and complex without the excessive sweetness of vinegars thickened with caramel. ....................
